My favourite "toys for grownups" store, Lee Valley Tools, has a dedicated kitchen catalogue this year, with three recipes and a smattering of kitchen tips to be found in the pages. Here's their catalogue page; look through the "Spring Kitchen 2020" catalogue.
Ooooh - a table-sized ceramic-blade spice grinder/mill! (page 14) I need a replacement for my dried-red-pepper mill. And the mini salt and pepper mill set on the back cover would be perfect for the office, if I was currently in the office.
(Yeah, I always find something to buy in their catalogues. I'm sure that's why they keep sending them to me.)

Halifax Donair.
Having had the real thing in Halifax (and in one restaurant in Ottawa where they know what they're doing), the recipe appears to be pretty close to the real thing. (Of course, actual Halifax Donair recipes are closely-guarded secrets.)
And, yes, lettuce in a donair is sacrilegious. Don't listen to the Albertans there. And so is cheese, for that matter. If you want cheese and donair meat together, just make a donair pizza (with donair sauce replacing the tomato sauce).

In Ottawa, that's a trick question, you know.
The university in Halifax is pronounced "Dal-how-zie". The road in downtown Ottawa is pronounced "Dal-who-sie".

Hm. I'll have to give that a try. I have a professional chef's Japanese cookbook, written by a Japanese pro chef for other chefs to use, and it has a teriyaki recipe that you make in the pan as you cook the mean, using the drippings, mirin, sake, soy sauce and a few other things. But at the very end of that recipe he says, basically, "but don't bother -- the Kikkoman glaze is as good as anything you can make yourself, use it and save yourself the effort." And I have to admit, I've yet to find a teriyaki in a restaurant that can beat Kikkoman (then again, most of the time it probably is Kikkoman). Despite this, i do at least part of his recipe every time I make teriyaki (protein of choice) -- splash the meat with mirin, deglaze the pan with sake -- before I actually add the Kikkoman.
