I had never heard of pupusas before today - but apparently Ottawa has had a Pupusa Festival for over a decade.

...That first recipe lists "1 sweet potato" twice, several lines apart, and doesn't do anything but reference "all the vegetables" collectively.  Looks like a typo, unless you really like sweet potatoes.-- Bob

The ingredient list does mention carrot, zucchini, and onion, so I assume those and the sweet potato are "all the vegetables".

(I stopped reading at "zucchini". That vegetable and I have an agreement: it only triggers my allergic reaction if I eat it.)--

Wait, do you actually have to keep the water for the tea boiling for 12-24 hours? Because that right there is a deal killer as far as I'm concerned.

Also, I wonder how it would work with a sugar substitute? You'd almost certainly have to use Pomona's Universal Pectin as other brands require sugar to gel properly.

The recipe does assume some previous knowledge, yes. I read that as "start with boiling water and let steep for 12-24 hours".

As for sugar substitute, I couldn't say. Around here, "jelly" contains sugar; "fruit spread" might or might not; and this was billed as "jelly".

Culinary experimentation of the week: Peanutburgers

I was mucking about and decided to have some fun.

Coleslaw recipe (quantities guesstimated):
* One pack Wegmans Asian Slaw Mix
* Three shallots, diced
* One cup Light or Vegan Mayonnaise
* 1/4 cup Soy Sauce
* 1/8 cup Rice Wine Vinegar
* 1 tsp Sugar
* 1 tsp Pepper
* 1 tsp Garlic Powder
* 1 tsp Five-Spice powder
* 1 tbsp Thai Peanut Sauce
* 1/4 tsp Chili Oil

Mix well. Leave in fridge for 3-4 hours to set.

I worked with pre-made vegan "chicken" patties, already breaded, but if you want to make your own (or use real chicken) go ahead.
Just cooked those, dredged 'em in a good Thai peanut sauce, then serve 'em on a hamburger roll with a good scoop of the slaw and maybe some colby-jack or provolone cheese.
