Wow. Incredible example of a 1940s SciFi take on a 1980's SciFi.

The appeal is that the guy found scenes in terrible old 1950s movies to MAKE something that's recognizably Empire Strikes Back

Er, not all of that was from 50's B & Z grade movies. I do believe the footage standing in for the AT-ATs are of a more recent vintage research robot, de-colourised.
