Anybody want to claim it's not Dungeon Keeper Ami? No one? Good.
That settled, I'd dispute its inclusion as "old school", especially as it's been an active as recently as a year ago.

There was another, though all I really recall about it was Ami being the MC and the author's note saying it was inspired by DKA but they wanted to do a darker take on the concept, because Evil finds a way.

You may be thinking of a branch on the Anime Addventure? I seem to recall there were several early branches, but most didn't last long.

That includes A Very Scary Thought (another work by Bader--same premise as A Scary Thought, but with Nabiki instead of Kasumi), Switching Heirs (similar premise, but with Gendo raising Ukyo and Ranma staying with his mother), Most Unlikely of Friends (early meeting and friendship between the Tendo Family and the Chinese Amazons) and others.

I'm kicking myself for forgetting this one.
Sailor Moon: Millennials, one of the last major fics from the early 2000s era where the English SM fandom was centered around the archive/message board "A Sailor Moon Romance," and one of the most ambitious SM fanfics ever, regardless of era--separate elaborate concurrent plotlines for all nine Senshi, Chibi-Usa, various love interests, and both cats, with quality writing and a staggering amount of foreshadowing. Sadly, both ASMR and the author's own site have been down for over a decade at this point, but the story is still available through the Wayback Machine, and some kind soul has posted a copy to AO3 as well.

Sailor Moon anime timeline, after "Stars". Usagi makes a casual wish at exactly the right... or wrong... time for the Silver Crystal to grant it, at least temporarily. Now she's a 16-year-old girl in a 21-year-old woman's body, and eager to take her relationship with Mamoru to the next level. In anyone else's hands, this would be a lemon. In the hands of Lilac Summers, it's a farce... and everybody remains in character for the entire story. Rated PG-13. Complete in seven chapters.

Reviving this thread with a story I was reminded of today: Elegy for a Golden Youth by Reid Carson, a 1998 Ranma fic. One of the first "Ranma is dead" fics, it's also one of the most successful, casting the events of the manga/anime as an almost mythic period that seems to evaporate from most people's memories after he dies and most of the cast disappears from Nerima after his funeral. The narrator and the changes in his life afterwards just add another level of unworldliness to it all.

I was recently reminded of Tel-Writings' Vorkosigan fanfics.
I was specifically reminded of We All Want to Change the World, sequel to Tide of Stars. While the story itself is mostly about Empress Laisa Vorbara having to rise to the occasion during a crisis where her husband is unavailable but the scenes that steal the story are Aral Vorkosigan being interrogated under a truth serum by terrorists who expect clean-cut answers that fit their narrative. If the name Vorkosigan means anything to you, you will realize that the answers they give are never that simple.
